Chewy Oatmeal Raisin Cookies



1 Cup Organic All-Purpose Flour
1 tsp Baking Soda (Bob’s Red Mill)
½ tsp Salt
1 tsp Ceylon Cinnamon
1 tsp Organic Vanilla
¼ tsp Organic Nutmeg
¾ Cup Organic Butter, room temp & unsalted
2 Organic Eggs, room temp
2 Cups Organic Oats (Bob’s Red Mill)
2/4 Cup Organic Sugar
1 Cup Organic Raisins (or homemade yum!)


Directions:
1. Cream together butter and sugar, scrap sides down. Once creamed together add 1 egg at a time and the vanilla, mix thoroughly.



2. Combine the flour, salt, cinnamon, and nutmeg, mix together and add to the egg mixture, mix to combine.



3. Add the oats, and raisins and mix 1 to 2 minutes more.



4. Use an ice cream scoop to scoop even amounts on to an unbleached parchment paper lined baking sheet. Bake at 350 for 12 to 14 minutes.
