Chicken Patties

One of my families favorite meals is always going to be anything which you can stuff into a bun and chomp away {no joke and for me the messy the sandwich the better! YUMM} Kailee started asking me if I could figure out how to make chicken patties as she says "you know the nasty frozen ones from the store, can you make them better mommy?" Well, crap-o-la! Of course I will TRY my best to figure this out... and I set out to do just that. I sent Daniel to Whole Foods Market (now, he BECOMES VERY side track with all the samples! ALWAYS!) to pick up some things. I wanted to make sure the ground chicken he gets is of good quality, stage 3 or above, and if not I told him to get chicken breast and I will ground them myself; so we did that first. I will not show that step as it is VERY messy job!
You Will Need:

1 Cup All-Purpose Flour
2 Cups Bread Crumbs
4 Eggs
2 tbsp Milk
4 lbs Ground Chicken
8 tbsp Parmesan Cheese
4 tsp Real Salt
Oil to fry
Place ground chicken- I only used 2 1/2 pounds still made 12 patties, mix with 4 tsp salt, and 6 tbsp Parmesan cheese- mix well
{FYI: this is a MESSY JOB use gloves!} Take small piece of the ground chicken, and make into a patty shape, take careful not to over 'mush' the patty
Dip well into the flour. Then into the egg wash or just eggs {I used 4 eggs and had left over}
Finally dip into the bread crumbs and be sure to cover the patty well with crumbs
Set them aside, this will allow the bread crumbs to dry onto the patty a wee bit- I left mine sitting while my cast iron pan heated up
Into the pan they go...I used palm shortening, heated it and started cooking- take CAUTION when using cast iron, as the WHOLE pan becomes very hot- Kailee touched the handle making tortillas' and burned herself- so I bought pads for the handles
BEAUTIFUL! {NOT PICTURED} Place on a baking sheet, preheat over 375 and bake 20-30 minutes, depending on how 'fat' you made the patties, or until cooked completely; I cut my biggest one open and check (as you can see) and when I close the buns I cut the sandwich
The final product, I made homemade buns- recipe coming soon. I place organic red leaf lettuce, organic mayo, organic homemade ketchup, and organic tomato... THESE ARE BEYOND AMAZING!
