CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Chewy Chocolate Granola Bars

Granola bars are easily my children's most favorite snack... the only thing I hate about store bought granola bars... the ingredients and the way the bars are processed, blah! I make these and literally cannot keep them in my refrigerator, everyone chows these down like no tomorrow; it is almost like they are scared they will not be able to get one, so they eat fast. This is amazing to make and give as a gift for this Holiday season; you will see plenty of jaws drop. Super chewy, super delicious, and super easy to make.. Give them a try and you will never go back to store bought ones! Skip you store bought! I WIN!!

You Will Need:

1 Cup Justin's Vanilla Almond Butter
1/2 Cup Organic Honey
1/2 tsp Real Salt
3 Cups Organic Oatmeal
1/2 Cup Organic Butter
Organic Soy-Free Chocolate Chips



Melt butter, almond butter, and honey on medium heat until smooth


This is perfect, creamy and smooth no chunks


Stir almond butter mix into the salt and oatmeal 


This step is optional- stir in 1 cup mini chocolate chips (soy-free) these will melt so if you do not want melted chocolate chips skip this


Tear off a piece of parchment paper use that to press the mixture into a 9x13' dish lined with unbleached parchment paper greased with organic olive oil. Press really really well.. I then took a spatula and pressed the sides down off the paper


Sprinkle chocolate chips on top...Refrigerate for 2 to 3 hours..then remove from dish and cut


Store in an airtight container, or ziplock... 
ENJOY! these bad boys are amazing!
