CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Baguette

Baguette is a thin crunchy (on the outside) soft and fluffy (on the inside) bread that pairs amazingly with my homemade bruschetta. I have such a fascination with making homemade breads, it is one of my favorite things to make with my kids; besides Christmas cookies! I take great joy in cutting, buttering, or adding toppings to bread that I know what is in it. Let's just stop with all this gibberish and get to making the bread...

You Will Need:

1-1/2 Cups Warm Water
5 tsp Yeast
2 tsp Real Salt
2 tbsp Organic Sugar, Honey or Agave
3-4 Cups Organic All-Purpose Flour

Add sugar, warm water, and yeast to a mixing bowl or your stand mixer bowl, stir gently and let bloom for 10 minutes
It bloomed amazingly, smelled so good in the kitchen..
After the yeast is bloomed, add salt and flour
Nicely kneaded
Grease a bowl and place in a warm area to rise for 1 to 1 in a half hours
Punch down and start to knead
Knead...
Roll into a long 'snake' like stick
Place for bread on a lightly greased pan, sprinkled with organic corn meal
Cut nice slices into the tops-
450 degrees bake 20 minutes or until golden brown and hallow
Cool on wire rack for 10 minutes before cutting it, this allows it to become more crispy on the outside
