CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Instant Pancake Mix

If your children are like my crazy kids, then you know you go through ton of flour for pancake mix. I have been making my own pancakes for over 6 years now; I no longer buy frozen, and I will NEVER EVER (....get back together... yeah we... name that song haha) buy store bought mix. Have you ever sat down and read the ingredients in the pancake mix? Soy, and crap I cannot even begin to pronounce or understand. Why not make your own mix? This mix is the easiest mix to ever make, and store for anytime you want or your kids want pancakes or waffles! So stop buying boxed mix, buy a glass jar (at Wal-Mart or Target) and get to making your own! You can even make cute labels and wrap them round the mix jar with twine or string! I will make it easier for y'all and put one in here!


You Will Need:

7 Cups Organic All-Purpose Flour
7 tbsp Organic sugar
7 tbsp Baking Powder
7 tsp Real Salt
Glass Container
Pancake/Waffle Mix Template


Throw everything into your storage bowl, mix well and you are done


So beautiful.. Now you take 1 Cup of this mix, add 1 egg, 1 tsp vanilla, 1/2-1 cup milk, 1 tbsp melted butter and you are good to go!
