Focaccia Pizza

Focaccia is soooo fun to make esp with kids. I love getting my kids involved in cooking. The younger you get them cooking, the more love they have for it and want to do it. I started my son off at 4 years old.. today he LOVES to cook. I did not do the same with my daughter and she is really not into cooking. So, I decided any children we have going forward, their little butts will be cooking. Anytime my nieces or nephews are over, we cook together (bread, pizza, biscuits, whatever).  You Will Need: 4 Cups Bread Flour (King Arthur) 2 tsp Salt 1 tsp Sugar (honey or agava)  1.5 tsp Yeast 1 tbsp Oil (olive or avocado) 1 3/4 Cups Warm Water  Toppings: Rao Pizza Sauce Sausage Links, cooked and cut Applegate Pepperoni Green Bell Pepper Mushrooms Olives Onions, Sautéed  Pizza-part bake at 445 degrees 10-12 minutes

Classic Peanut Butter Cookies

Growing up I loved peanut butter cookies, they were mine and my dads all time favorite for sure. I cannot really remember a time where we did not have peanut butter cookies made on Christmas or for the Holiday seasons. I do remember they were almost always bagged ones instead of homemade. I prefer to go with the homemade version instead of the store bought crap for many, many reasons. Number one reason is, the extra junk they add to the mix is not needed but they do it because they can! Yuck! These cookies honestly are the best ever. They are crispy on the outside and yet super chewy on the inside.
You Wil Need:
1/2 Cup Butter, room temp
1/2 Cup Brown Sugar
1/4 Cup Sugar
1/2 Cup Peanut Butter (or homemade)
1 Egg, room temp
1 tsp Vanilla Extract
1 1/3 Cup Flour
1/4 tsp Salt
3/4 tsp Baking Soda (Bob's Red Mill)
1/4 tsp Baking Powder
Cream the sugars and butter together 
Add egg, and vanilla, mix well
Add the peanut butter and mix well 
Looks so pretty
Mix in the dry ingredients
Cover in plastic cling and place in the fridge for 3 hours minimum 
Using a 1 tbsp size ice cream scoop, scoop the dough and roll into a ball
Place on baking sheet lined with unbleached parchment paper
Dip a small fork into some sugar
Press down on cookies going in both directions opposite each other, this gives the cookies that classic look
Bake 350 for 9-11 minutes
I took ours down front for the office staff and the guests here at our apartment place! They look amazing!
