Focaccia

Focaccia is soooo fun to make esp with kids. I love getting my kids involved in cooking. The younger you get them cooking, the more love they have for it and want to do it. I started my son off at 4 years old.. today he LOVES to cook. I did not do the same with my daughter and she is really not into cooking. So, I decided any children we have going forward, their little butts will be cooking. Anytime my nieces or nephews are over, we cook together (bread, pizza, biscuits, whatever).  You Will Need: 4 Cups Bread Flour (King Arthur) 2 tsp Salt 1 tsp Sugar (honey or agava)  1.5 tsp Yeast 1 tbsp Oil (olive or avocado) 1 3/4 Cups Warm Water  Bake at 445 degrees 10-12 minutes

Ranch Chicken

Chicken is a highly requested food in our house. The kids love chicken, which is good because we try to stay away from red meat (a least not all the time, maybe once a week- we much rather ground turkey or chicken). Kailee is obsessed with ranch, chicken and anything crispy! I figured this would be a great recipe to share finally. This is super simple, you can make it up fast, double the recipe or triple it if you wish. I like making my potato wedges or my au gratin potatoes. I also love pairing this chicken with some hearts of romaine lettuce, tomatoes, and a bit of organic ranch. Onward with the recipe...
You Will Need:
2-3 Chicken Breast
1 Cup Crispy Onions
1/4 Cup Butter, melted
3 tbsp Homemade Ranch Seasoning
Crush onion crisps, place in ziplock with homemade ranch seasoning
Dip chicken in melted butter
Place chicken in the bag with your onion crisps and make sure it is thoroughly coated
Oil your pan before placing chicken in pan
Bake chicken at 350 for 20 minutes, turn chicken over and continue cooking about 20 minutes (or until chicken is done)
I made roasted potatoes, organic salad, with homemade ranch and green beans to go with this absolutely amazing chicken (so moist and so yummy)
