CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Crockpot Refried Beans

Crockpot style! Super simple, super easy, super yummy, and oh yeah did I mention how amazing they make the house smell while cooking!?! No! Well they do! OMGG! I am going to use half of these beans to make my pinto beans and the other half I am reserving to make ranch style beans (which are literally my favorite). I love beans, Daniel makes fun of me, but I cannot handle myself! I just love beans! They are good in fiber, iron, and just taste super yummy when you add the correct seasoning. I will have a recipe for my ranch beans coming soon (since I am taking half of these for that I will be making them asap).



You Will Need:

32 oz. Dried Pinto Beans
2 tbsp Beef Base
1 Onion, cut in half
5 Cups Water
2 tsp Garlic
2 tbsp Chili Powder
2-4 tbsp Cumin, to taste
1 Jalapeño 
Salt & Pepper, to taste





Place all the ingredients in the crockpot and allow to cook for 8 hours


This is about 4 hours in, once they are done you can use an blender to blend them until smooth (with the onions and what not in them) 


I removed the beans, placed in a saucepan and mashed them with a potato masher because I enjoy chunks in my refried beans


Daniel is not a 'BIG' fan of beans, but he eats them on the side
