Focaccia

Focaccia is soooo fun to make esp with kids. I love getting my kids involved in cooking. The younger you get them cooking, the more love they have for it and want to do it. I started my son off at 4 years old.. today he LOVES to cook. I did not do the same with my daughter and she is really not into cooking. So, I decided any children we have going forward, their little butts will be cooking. Anytime my nieces or nephews are over, we cook together (bread, pizza, biscuits, whatever).  You Will Need: 4 Cups Bread Flour (King Arthur) 2 tsp Salt 1 tsp Sugar (honey or agava)  1.5 tsp Yeast 1 tbsp Oil (olive or avocado) 1 3/4 Cups Warm Water  Bake at 445 degrees 10-12 minutes

Crispy Buffalo Sandwich

Daniel is obsessed with anything that has buffalo sauce on it. I figured why not give this sandwich making a try.. and try I did! I cannot tell you enough how amazing this taste! How crispy!! It was PERFECT!! Perfect for any game day (football is coming soon GO BUCKS!!) or just because you are in the mood for a nice crispy sandwich without all the additives from fast food joints.
You Will Need:
Chicken Breast, cut in half
1 Cup Buttermilk
3 tbsp Chicken Spice
Buns
Green Leaf Lettuce
Tomatoes
Ranch
Coconut Oil, frying
Frank's Buffalo Sauce
2 Cups Flour
Salt
Add your chicken seasoning to your chicken (after you cut the chicken breast in half so it is thin)
Add buttermilk (I used homemade from the butter I recently made) Set in fridge for 6 hours or overnight
This is the oil I fry anything in and pan
Take a bowl with your flour in it, dip the chicken and cover in flour (firstly heat your oil)
Add chicken and cook 5 minutes per side or until golden brown
Turn and cook another 5 minutes or until golden brown
Place ranch on bottom bun
Add lettuce, tomato (I salt my tomato)
Place chicken on top (Daniel added cheese)
And pour the yummy, amazing buffalo sauce on top... place top bun and cut.. enjoy!
