CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Goulash

One of my favorite childhood memories was sitting on the counter in the kitchen talking to my mother while I watched her make one of my favorite dishes ever. The conversation would flow, we would laugh, fall off the counter, and make a bloody mess; but guess what? That is what memories are made of! Laughing, messes, falling of counters, and just plain old spending time together. I encourage you to try this dish and fall in love. Now, the funny thing is, when I make this dish, guess where my daughter is? On the counter, talking with me, laughing, making a big old mess! Take this tradition and run with it, make it fun with your children or just one child!

You Will Need:

16 oz Macaroni Noodles
Tomato Sauce
Tomatoes, Diced
1/2 Onion
1 lb Ground Meat
Parsley 
Onion Powder
1 tbsp Italian Seasoning
1 tbsp Garlic, minced
Garlic Powder 
1/2 of A Packet of Chili Mix
Salt & Pepper, to taste
Dice your onion
Boil a big pot of water, lid on, salt the water and add organic olive oil to help prevent sticking
Boil the noodles until done
Add two to four tablespoons of oil to a stock pot
Cook your onions, and garlic; add salt and pepper
Add your ground meet in, I used turkey (and spices)
Once the meat is done, add your tomato sauce, diced tomatoes, an noodles. Taste for seasoning; adjust as needed
