Focaccia

Focaccia is soooo fun to make esp with kids. I love getting my kids involved in cooking. The younger you get them cooking, the more love they have for it and want to do it. I started my son off at 4 years old.. today he LOVES to cook. I did not do the same with my daughter and she is really not into cooking. So, I decided any children we have going forward, their little butts will be cooking. Anytime my nieces or nephews are over, we cook together (bread, pizza, biscuits, whatever).  You Will Need: 4 Cups Bread Flour (King Arthur) 2 tsp Salt 1 tsp Sugar (honey or agava)  1.5 tsp Yeast 1 tbsp Oil (olive or avocado) 1 3/4 Cups Warm Water  Bake at 445 degrees 10-12 minutes

Banana Oatmeal Cookies

This recipe was given to me by a family member, however I decided to mess around with it to what I would like, instead of his mother. First, I took out the shortening and added butter (any fat will do). I added vanilla to the recipe, because any good cookie needs a splash of vanilla, it makes the cookies amazing in my book. I did not cook these cookies, I froze them for Christmas but once cookie they were amazing. 
Update: these cookies are still a family favorite. Going into October is when I start to make my Christmas cookies and freeze them. I have already made my chocolate chip cookies, and double chocolate chip cookies. These are next on my list, however I only have 3 ripened bananas, so we are cutting the recipe back a bit. 
You Will Need:
6 Ripened Bananas
1/2 tsp Vanilla Extract
2 Large Eggs
2 tsp Cinnamon
1 1/2 Cup Butter, softened
1 tsp Nutmeg
4 Cups Oatmeal
3 Cups Flour
2 Cups Sugar
1 tsp Baking Soda
1 tsp Salt
Add softened butter to your kitchenaid stand mixer
Add sugar to the softened butter; mix on low for 5 minutes or until well combined
Add mashed bananas, vanilla, and eggs mix on low until combined
Add the dry ingredients; add flour last, mix then add flour 
Mix to combine (it is that easy!)
You can freeze the dough like this for Christmas time, or whenever, that is what we LOVE doing, then we pop them in the oven at 350 degrees for 12-14 minutes
