CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

We have been busy bees since October 30, 2017, when my 17 day vacation started at work. I have been looking forward to this vacation but at the same time dreading it because I knew it meant a LONG journey of unpacking and decorating our house. November 2, 2017 we woke up at 6:30 AM checked out of the hotel we were staying at for a month, packed up our U-Haul and took our belongings to our house (we spoke with the building manager and he allowed us to unload our U-Haul in the garage since we have to turn it in that day before closing). Kris, Kai, Dan and myself worked VERY hard to get the U-Haul unpacked within 2 hours (a 26 foot U-Haul full!! I am very impressed by us! we rocked it out!) After we unpacked the U-Haul, we headed to turn the U-Haul in, then headed to Dublin to close on our house. Once we closed, we decided we needed a second car (with Dan working late nights and far away now, if anything happened at the kids school, I would not be able to get to them, so a second car was needed). We walked in, signed for the 2016 Dodge Durango and headed home to unpack. At this time, it's 4:00PM and we are all exhausted but knew we had a long night ahead of us. Here is a slideshow/video of our journey to our forever home. As you all know, we've been looking and working hard for over a year to get here, and it still does NOT feel real life!! This week we have ADT being installed, and our storm doors. We still have our guest room to decorate and furnish, our front sitting room to decorated and furnish and I still need a desk! We also are saving to put our fence in, hopefully that happens ASAP but we shall see! Hope you enjoy!
