Beef Stew

Winter time for me means crockpot soups, stews and more comfort foods. Beef stew is a family favorite like most my recipes. I swear the kids tell me all the time "mom you are an amazing cook." Sometimes, I do not believe them because I make mistakes, I fuck up, it is called being human. Butttttt other times, I am like hells yes I am!!! That dinner was amazing!!! This is one of those. You Will Need: 1 Chuck Roast 1 Bag Small Potatoes, cut 1 Bag Baby Carrots 64 oz. Beef Bone Broth (this is important) 4-6 packets Beef Gravy (I use Kinder Bone Broth Gravy) It is important you use beef bone broth. Why? Because bone broth is sooooo good for you! It has natural collagen and fats that keep you from getting sick. We switched to bone broths ONLY and have rarely gotten sick during winter months. Nothing more than a common cold, no flu, no covid *knocks on wood*! Crockpot cook on high for 4 hours, low 6 hours. I like low and slow!!     

Blueberry Cheesecake Popsicles

I love creating new exciting popsicles that make my children want to be involved in the process. Kailee's little hands were all over making these it was so much fun to watch her excitement. Kailee had an amazing time making these so be sure you get your children involved! I  must say I am not fan of blueberries at all however the cheesecake portion of these makes me enjoy the blueberries. While we all know blueberries are very good for you in so many ways however I just do not like them at all. But put blueberries in this, and I am GAME! They are amazing! Literally taste like you are eating cheesecake not a popsicles... mmm!!! (might need to pull one out of the freezer...haha) 

You Will Need:
1 Pint Blueberries
2 tsp Vanilla Extract
1/2 Cup Cream Cheese
4 tbsp Graham Crackers
1/4 Cup Water
2 tbsp Sugar
1/2 Cup Milk
1/2 Cup Water
4 tbsp Raw Honey, divided
1 tsp Butter, melted
Crush your graham crackers, add sugar, butter and stir until mixed throughout 
Place blueberries, water in your blender
Add honey to the blender
Blend until smooth, place in cup and set aside
Clean out blender, and place cream cheese
Add honey
Add vanilla 
Add milk
Blender until smooth and be sure all the ingredients are blended well
Pour your cream cheese mixture into bottom of your popsicle mold, we ended up using two different molds because we made so much of this
Add some granola in between layers
Add blueberry mixture, continue to fill mold switching between cheesecake mixture and blueberry mixture
Top granola, are they not beautiful in the mold!!?
Add top of popsicle mold, add popsicle sticks to them and freeze overnight
Be sure to wrap these in parchment or wax paper before placing them into the ziplock.
