CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Homemade Gogurts

Growing up gogurts were always my favorite yogurt snack, I know I know not super healthy! I get it however as a child I never knew but now I know and fixed the "issues". I love making my homemade crockpot yogurt, it is one of my favorite things to cook/make for the family. For this recipe I used organic strawberries (I froze myself), organic banana (I froze myself), and chocolate cacao. I wanted to make a mixed berry one however I ran out of blueberries that morning when Kailee made oatmeal and put blueberries in them instead of sugar. You do not have to add honey to this recipe however I feel like it adds a health benefit for the children. Here I have pictured just regular organic honey, however I used organic raw honey (I ran out and did not take the picture until after I used it all). Raw honey has a ton of health benefits. We use it for coughs, sore throats, colds, added to our plain yogurt and much much more. Enough about raw honey, you can do your own research on this topic.

You Will Need:
1 1/2 Cups Homemade Yogurt
1 tbsp Gelatin
1 Cup Frozen Fruit (any)
1 tbsp Organic Raw Honey
Add your fruit and gelatin to your blender (I am using my Vitamix- my all time favorite Anniversary gift!)
Add honey
And finally add yogurt
Blend on high until all is blended through well (I had to mix it around a couple times because some of the strawberries were stuck together)
Looks pretty! I love the color (no added dyes here!)
Now to the fun part!!
I had my hubby help. We are filling our Zipzicle bags
Fill to the line only, we places ours in an old yogurt container to keep them from falling over while freezing
Strawberry banana, same process however I add 2 cups of yogurt to get more pouches filled (the kids LOVE THESE!) We also did a banana chocolate one (just add cacao powder, 2-4 tbsp and banana)
Ready for the freezer, label and freeze overnight (be sure they are standing up not laying flat)
