CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Air Fried Cheese Stuffed Meatballs

 My teens love when I make my spaghetti with homemade meat sauce so much that they ask for it once or twice a month. Now, tell me that does not sound AMAZING?! I have never made cheese stuffed meatballs, but Aldi had 6 pounds of ground meat 50% off ($6.00 a pack!!!). Of course, I could not resist and pass them up, we got a few to just freeze and then rest to make meatloaf and meatballs for the freezer. Once I make the meatballs in my air frier, I like to cook them half way through then freeze them until we are ready to eat them. I have about 30 pounds of ground beef to work with for meatballs. You want to make sure you have a good amount of cheese balls on hand, I always buy extra because my teens and husband love these just as a snack. 

Basically, all you're doing here, as you see photoed below, is rolling your meatballs, making a hole in the middle and putting a piece of cheese then rolling up into a ball and air frying them. It is very easy to make, does not take much time and taste amazing! Def beats having store bought meatballs that I have no idea what is in them! These are GREAT for spaghetti, or meatball subs or just plain with some sauce on top. 

You Will Need:
6 lbs Ground Meat (turkey, chicken or beef)
2 Cups Bread Crumbs or Panko 
1 Onion, minced (very finely)
Mozzarella Mini Cheese Balls
1/4 Cup Milk
1/4 Cup Tomato Sauce (or ketchup)
2 Tbsp. Ground Sage
2 Tbsp. Garlic Powder (or 1 Tbsp fresh garlic)
2 Tbsp. Onion Powder
2 Tbsp. Italian Seasoning (unless in your bread crumbs)
Salt & Pepper







Air fry at 380 degrees 
For 8 minutes. I had to keep checking them as some cooked faster than others. Also, be sure to empty the grease often.
We lined them up on a baking sheet to freeze, the kids LOVED these soooo much!
