CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Back To Canning

 I am soooooo excited to get back into the swing of canning. I have taken way too much time off canning and my family needs me to get back on the ball. When we lived in our old home, before selling it in 2015, I just had a lot more time to can, bake homemade stuff, and what not. Then we moved, I got a job and got way to busy for my own liking. I have been working since. Now, I am no long employed outside the house or in general, besides YouTube and this blog, so I am opening my life back to canning and donating all the foods we should have not been eating to begin with. My hope in doing this now, 4 months before my daughters weening off medications, is that when we start to ween her off her epilepsy medications she will be fine. No seizures, no side effects. So.. follow along, as this canning journey is about to kick into high gear!! I have TONS of stuff I am getting this weekend and going to dive right into canning it all up. These recipes will all be safe canning recipes from either ball canning or from the National Center for Home Food Preservations. 

If you have anything you want to see canned fresh, let me know. I cannot express how excited I am to do this again and save my family and hopefully yours some money along the way. In today's world, you never know if you will be able to find kidney beans tomorrow or dog food the next day. That is another huge reason I am processing my own foods again. Let's GO!!!
