Molten Lava Cake

T his is the PERFECT Valentine's dessert or anniversary; haha mine is the same day (Valentines Day). As much as I dislike chocolate, I do like me some lava cake once in a while. I plan to make this, this year as well for our Val-nniversary! 😁 You Will Need: 5 tbsp Butter, melted 2 Eggs 2 Egg Yolks 1 Cup Chocolate Chips 1/4 Cup Flour 1 tsp Vanilla 1/8 tsp Salt Melt butter and chocolate chips together. Stir in rest of ingredients. Bake at 450 degrees for 8-10 minutes. Invert cakes once out of oven. 

TV Dinners: Enchiladas

Enchiladas are a family favorite, we try to make them at least once a month if not every other month. Today, I made 10 or 12 I lost count, containers for my husband, Dan's, work lunch or the kids lunches. He takes them out of the freezer in the morning, and they thaw by time he is ready for dinner (he works night shifts). These are soooooo easy to make, a lot cheaper to make and just better for you when you can control the ingredients used. I usually make homemade tortillas but I was not feeling very well this day, so I used store bought.
