CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Canning Storage

 

Every year my canning supple seems to grow and grow. This year, we upped our gardening, went to the farm close by us and got to work. And this was a LOT of work but very rewarding at the same time. In the Spring of 2023, we plan to expand the garden even more. We have already added 2 peach trees, 4 apple trees, 1 pear tree, 1 plum tree, 5 blueberry bushes and 2 elderberry bushes. This is literally going to be a dream back yard for me. Only thing more I wanna do is fix our fence (nothing is wrong with it, just do not like the look of it, our lab dog Sadie tends to bark at people whom she can see, if I redo the fence, it'll block her view), and a patio (we still have yet to decide, cement or wood...hard decisions). But 1 step at a time, for now, we wait for our blueberry bushes so we can plant them..we have the new garden area prepped for dirt, just waiting on the bushes to get the compost/dirt in. In the meantime, here is what all we canned this year. Here is our shelves. I lost some footage from the SD card I had just bought (it stopped reading on everything, so odd) but we built this ourselves and it was such a blast and learning experience.
