CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Spanish Rice

With the prices of food increasing a lot lately, I keep getting messages about budget friendly meals for those who cannot afford a lot. Well, I make this meal all the time! Normally, I make it with 3 lbs of beef, and 4 cups rice.. but I have recently learned how to cut back. Let's break down how much this will cost you if you follow it like I did with the grass fed beef, which I recommend you do, since this is a cheap meal anyways. This made 6 servings, adding more rice than beef is what keeps the cost down. We have plenty of leftovers for lunch tomorrow. When I cook, I make sure that we have enough for tomorrow as that is lunch and no one gets a say lol. If we do not have enough, I will make something else or the kids get to pick something else (sometimes I have organic lunchables- simple truth brand on stock for those days). I will not count the cheese since not everyone likes or wants cheese on it. I usually pair this meal with peas but I did not feel like it tonight since I am clearly not feeling well. 

Beef: $7.99 (1 lb- I normally get the 3 pk for $18.99 then dollar off like I had today making it $17.99)
Rice: $4.99 (for 32 oz. Used 2 cups or 16 oz half the bag) $2.50-2 cups
Tomato Sauce: $1.00
Taco Sauce: $1.00 (I had half each jar so I will count it as 1)

Total: $12.49/6 $2.08 a bowl

Can you get fast food at that price? Nope! So, just take the time out, make a meal on a budget and enjoy. I promise your kids will ask for this over and over again (mine do!). Typically, I stuff this into bell peppers (just boil the pepper after gutting the seeds out, then stuff and bake at 350 for 10 minutes. It is the BEST ever, I actually forgot I had peppers or I would have stuffed some! oops, I will stuff some tomorrow with the leftovers. This will make 6 good sized stuffed peppers as well and peppers are only $0.89 each right now so does not add much more to the total).
