CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Laundry Room Remodel


Finally, finally, finally!!! We are redoing our laundry room. I am a short person, and I could NEVER reach the products we had above our washer/dryer. Imagine every time you had to do laundry or needed something calling one of your teens because they are much taller than you and can reach the items. Yeah, embarrassing and I HATE it! I could not have been happier when we were walking around Home Depot looking for a deep freezer (ours went out and we needed a new one- so we thought, we decided against it and instead stick to the 1 we have no need for 2). As we strolled around I kept wanting to ask hubby if we could redo our laundry room. You see we love doing DIYs as much as possible but took almost 2 years off doing anything, he was actually VERY excited to get back into DIYs which shocked me!! In such a good way!!! So, we strolled over to the cabinets, grabbed two, strolled over to the 1x12x8's wood and grabbed 4 of those. I ordered everything else on amazon (brackets and all, links below). We had screws, had primer, and paint had everything else and when we went home I got to work. I was sooo excited I just could not wait. I did not film putting the lights on the shelves, I just added them a few days ago (2.25.23) and honestly they make the room!! Walking into here, I do not need my big light on to do the laundry. Another GREAT thing about these lights, you can just charge them up and use them when electric goes out. We always charge ours up when we know a storm is coming so we are ready just in case. 

Now, this is only part 1 as the video says and photo above. I am working on finishing up the table (I want to add plywood under the table, and close it off with a 1x3 piece of wood so it looks like the table is floating there. Also, I want to add another cabinet, on the wall above the table by the hanging rack. Then I will paint the room and caulk around the table, shelves, and cabinets. Still need to add decor to the tops of the cabinets. But for now, I am VERY happy with our process here (we will finish this once our kids b-days pass in May- BIG things coming there!!) Until then, I will enjoy what we have done and figure the rest out later. 😁✌❤
