CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Mini Chicken Tostada

Tostada's are one of my favorite Mexican dishes every. I do not make them as often as I would like but here I just had to have some. You can see in the video, I was prepping pizzas for the freezer. I made a triple batch (not all at once, 3 different times) of my dough, and made 12 pizzas! It was a LOT of work but in between making them I had to get dinner going. Luckily for me, these are SUPER easy to throw together and do not require much attention, leaving my attention on the pizzas I was prepping. Photo below of most of them... anyhow, first think you must do is add oil to your tortillas (both sides), then bake at 400 degrees for 6-8 minutes (keep an eye on it, they puff up fast). Then add your beans, chicken, cheese bake another 6-8 minutes. And top however you please. I wish I had cut up some avocado or made guacamole that would have been amazing. But I did make Mexican rice as the side. This meal filled our family and did not cost much to make.  

You Will Need:
1 Can Refried Beans
1/4 Cup Salsa (or taco sauce)
Shredded Cheese
Mini Flour Tortillas
Shredded Chicken
Lettuce, shredded
Sour Cream
Tomato, diced
Black Olives, diced
Avocado Oil, or whatever oil you want
