Normally, I make this in my instant pot but today I was feeling making it in the oven, since it is rainy and just gross outside here in Ohio. Taco Tuesday is our favorite day of the week, yes I know it is the start of the week but tacos!! Come on!! Lately, I have been trying to find new ways to make tacos so the family is not sick and tired of tacos, but let's be real, they could never be sick of them like I am not. Tacos are life! Change my mind I dare you!! 😉😂 Our love for taco Tuesday is like no other. So, let me know any recipes for taco Tuesday we should try!!
Casserole:
1 Can Corn
1 Can Refried Beans
2 Cups Cook Basmati Rice
2 Cups Shredded Cheese
1 Pack Chicken, diced and cooked (seasoned)
Salt & Pepper
20 oz. Enchilada Sauce
Homemade Enchilada Sauce:
1 Cup Tomato Sauce
1 1/2 Beef Bone Broth
2 tbsp Chili Powder
1 tsp Cumin
1/8 tsp Cayenne Pepper
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
4 tbsp Butter
3 tbsp Flour
Salt & Pepper
