CopyCat Del Taco Chicken Tacos

Living in Arizona for 13 years of my adolescent life I grew up loving Del Taco. My parents would get take out there often. My sister, Michelle, that was her favorite taco out. If we did take out one night, Michelle always wanted Del Taco over anything else. She loves the chicken tacos. Now that I live in Ohio, Del Taco is not really out here. I have found 1 or 2 but they are some distance away from us. So, I decided to try and make that for my Sunday Family Movie night pick. Tonight, is my pick and I drew Mexican food so why not give it a try.  Marinade: 3 Large Chicken (I used thin chicken breast), diced 1 Lime, juiced 1 tbsp Taco Seasoning  1 tbsp Soy Sauce 1 tsp Garlic Powder 1 tsp Onion Powder 1 tsp Chicken Bouillon Powder 1/4 tsp Paprika Place all ingredients above into a ziplock, shake well and marinade for 30 minutes to an hour. I found the longer the better flavor.  White Sauce: 1 cup Mayo 1 Lime, juiced Whisk together in a bowl until smooth, set aside until ready for assembly.

Crockpot Pulled Pork Sandwich

This is the most moist, tender pulled pork I have ever had! Now, we do not often eat pork because it is hard to find a good brand that is not poorly raised and that is organic. However, I saw this Simple Truth brand and I just knew it would be okay, I trusted it fully. I suggest, if you do not have a Kroger or a store that is a cousin to Kroger then Whole Foods Market or a health food store will have the best. The BBQ sauce can also be found at Whole Foods Market or Kroger. The BBQ sauce is the ONLY brand I trust; it is made with pure ingredients that are organic and has agave instead of sugar (much better for you- I buy their ketchup... yum yum). Anyhow.. back to this.. I did not want to 'over' season this pork, just let it do its' thing in its' own juices and a bit of homemade ranch seasoning.

You Will Need:

5 lbs. Natural Pork Tenderloin
4 tsp Homemade Ranch Packets 
2 Bottles Organic BBQ Sauce
Organic Buns



Place pork in crockpot


Add your ranch seasoning, and cover half way with water; cook on low for 6-8 hours or high 4-6 hours (turn half way if you're home in time to do so, otherwise I would cover the pork with the water) 


Pull out of crockpot after the allowed time, and remove any fat that you can


Shred the pork finely. I ended up needing two whole bottles of sauce, because there was a LOT of meat (woo hoo leftovers!) add sauce and mix


Only sauce I trust!


These buns are homemade (no I do not have recipe on them yet...) 


We had Organic Chips (cooked in Avocado Oil),  Organic Mixed Veggies, and home canned pickles for our sides, but you can do whatever you want! Coleslaw would be lovely and/or homemade potato wedges
