Canning Green Beans

Green beans are something that grow a lot and fast in our garden. We typically plant an entire garden bed just with green beans or 50/50 green beans/peas. It is sometimes difficult to keep up with canning them as we harvest them. This year, I decided to freeze them while waiting to have enough to can, well that was a bad idea, when thawing them they got too soggy and did feel safe canning them. So, I started canning as I picked them. A trick I learned this year, when you do not have enough green beans, wrap them in damp paper towels and place in a ziplock (or air tight container, I used containers below) this keeps them fresh until you have enough.
